Domori Trinitario Tanzania 70%
Domori - Trinitario - Tanzania - Dark Chocolate - 70% - Batch L3130
Cacao origin/type:
Trinitario beans
Ingredients:
Cocoa beans, raw cane sugar
Other facts:
Made in Italy (Domori SRL, None (TO)), no direct seal as far as I know (and the package shows), but working closely with several NGOs and South American governments for sustainabilty
The cocoa comes from a small area, the Morogoro region in Tanzania. The beans are harvested by the Kokoa Kamili cooperative, which is committed to improving the quality of cocoa in its country by international standards.
Now Domori has partly changed its legendary square shaped packaging and you get the classic rectangle. Otherwise the design remains exactly the same, classic but elegant, white-red-gold with a little color in the country name and animals.
I particularly like the inside, the rather classic gold foil from before has been replaced by semi-transparent silk paper with a chic Domori print all over.
The now rectangular bar is, like the square before it, divided into further squares, silky appearance, still nice and thin, with a small embossed logo alternating with the Domori name. Breaks quite hard, although this is almost difficult to assess as the slab is so thin and therefore breaks more easily. It breaks quite straight and with a very fine-pored cross-section. As always, the overall finishing of the bar and the packaging is extremely high quality.
Aroma:
On the one hand deeply dark aromatic, but characterized by a primary, authentically hearty cocoa note, chocolate cake, mocha, some raisins also support the whole nosing experience
Taste:
As always, you can feel the Domori craftsmanship, one of the most delicate, soft and evenly melting brands out there, dominated by pure cocoa concerning the aromatics, supported by slightly earthy notes, raisins in particular and some licorice, as well as beautiful mocha, very fine acidity far back on the palate, as well as a very subtle smoky note
Finish:
In the finish you notice very subtle acidity of dry raisins, light licorice and mocha notes remain primary, dark, earthy-sweet, like a very authentic, juicy chocolate cake, later also a hint of smoky woods
Comment:
The high score speaks for itself, especially as I actually prefer or find chocolates exciting that contain very atypical notes. Here we have very cocoa-heavy and cocoa-related notes such as mocha and raisins, but it is still highly aromatic and of unimpeachable quality. Another Domori work of art.
