Recipe:

- 30ml aged rum

- 30ml madeira

- 22.5ml fresh lime juice

- 15ml cinnamon syrup

- 1 dash Angostura bitters

- 1 pinch of sea salt

- 2x 1 inch pieces of pineapple

Combine ingredients in a shaker with ice, slightly muddle the pineapple pieces. Shake to chill. Strain over fresh ice and garnish with a cinnamon stick and pineapple leaves.

Today we have something quite easy to understand, a nice mix of tiki drink and sherry cobbler, the former thanks to the rum and the typical pineapple-cinnamon combination, the latter represented here with a nice madeira wine (instead of sherry). You should definitely get some madeira for your home bar if you haven't mixed with it yet, one of my favorite fortified wines ever. A nice, easy sipping tiki cobbler with a nice spectrum of flavors that is given a little more depth by the salt and bitters. Ideal when it gets a little warmer, Madeira makes everything better anyway. Like white port...
