Recipe:

- 45ml black blended rum (here 2:1 Gosling's / OFTD)

- 22.5ml lemon juice

- 15ml apple brandy

- 7.5ml demerara syrup

- 7.5ml cinnamon syrup

Shake everything on ice until sufficiently chilled, strain into your prechilled coupe, no garnish.

Created specifically for the Smuggler's Cove Bar by Beachbum Berry in 2009, a nice Rum Sour variant. In the nose fresh & crisp, but also already baked apple, chocolate shavings, lemon zest, interesting, unusual combination, some toffee.

Tasting it you get caramel, crème brûlée and a little tart with apple compote on top, fresh sugar cane behind and cinnamon, citrus zest, then on a second sip more intense cinchona bark, baked apple, ginger, cocoa shavings, fresh lime zest.

Well worth a try for anyone who wants to try out new rum sour variants.
