Coffee Collins
Recipe:
- 45ml coffee liqueur
- 25ml fresh lemon juice
- 12.5ml rich simple syrup (I prefer demerara)
- 60ml soda
Shake first 3 ingredients on ice until sufficiently chilled, strain into an ice-filled, pre-chilled highball glass, top up with the soda, briefly stir. Garnish with a lemon wheel/cherry sail.
In fact, I drink 0 coffee, yes, zero as in nada, only sipped it 4-5 times in my early youth, hated it, never started but I am still alive and doing well, thanks.
Actually, I can not stand the taste even with a lot of milk, only processed as in tiramisu or the like was acceptable, cake, etc. Drinks in that category worked too. For example, one of the best dessert drinks I ever had: the Gliss Royal at Seiberts (here in Cologne) with homemade vanilla ice cream, rum, crème de cacao & housemade coffee crème, the whole thing flashblended into smoothie consistency, served in a coupe. At some point later, at least a few short drinks with subtle coffee flavor worked too, at least for a few sips from my friends glass and now I actually like many high quality coffee cocktails.
Therefore, a few months ago I bought the Belle Booze (the store of the Ona Mor Bar here in Cologne) coffee liqueur, the housemade stuff they use in their drinks, high quality ingredients, etc. Not dissimilar to Mr. Black, therefore a good substitute in recipes, with a minimal touch of mezcal in it for a great roasted note. So I felt the need to try out various coffee drinks, this absolute modern basic here was the start.
I have slightly reduced the citrus from the DG recipe, even with 25ml honestly still a touch too acidic for me, but either way a very refreshing, urban and modern drink for the big city, I think there is no need to explain anything with notes here.
