Recipe:

- 60ml Martini & Rossi Ambrato Vermouth

- 15ml aquavit, preferably Linie

- 15ml Luxardo Bitter Bianco

- 1 dash peppercorn tincture*

Stir everything over ice until sufficiently chilled, strain into a prechilled cocktail glass. Garnish with a lemon twist.

An absolutely wonderful apéritif cocktail. Also, ideal for day-drinking, brunch or food pairing, I can imagine it as an ingenious accompaniment to some fish. In the first third it seems almost a little too smooth, delicate, grapes, honey, apricot, but then all the spices come in, but elegantly and beautifully fanned out, never hot, but subtly spicy, aniseed, bitter orange, wormwood, quinine, a little black pepper, etc. This is followed by a very long finish.

*Peppercorn Tincture

- 1/4 cup whole back peppercorns
- 1 bottle overproof vodka

Steep peppercorns in overproof vodka to taste, typically at least three days. Strain, filter and bottle.
