Recipe:

- 45ml dry gin

- 22.5ml Aperol

- 22.5ml Amaro Montenegro

- 2 dashes Dale DeGroffs Pimento Bitters

Stir all ingredients on ice for about 20 seconds, strain into a prechilled rocks glass over one large ice cube, garnish with an orange twist.


Another Negroni riff, this time from one of my favorite bar books by Sother Teague. He aptly describes in his contribution text that the drink is very juicy and meaty without really containing any juice, and I can agree. The grapefruit and rhubarb notes of the Aperol, along with the sweet bitter orange of the Montenegro round out the gin nicely and make this a good "starter" Negroni for those who find the classic combination a bit too edgy.
