Recipe:

- 90ml aged Jamaican rum

(preferably equal parts Appleton Estate Signature and Rum-Bar Gold)

- 30ml lime juice

- 30ml grapefruit juice

- 15ml cinnamon syrup

- 15ml passion fruit syrup

- 5 dashes Angostura bitters

Combine all the ingredients in a shaker. Add ice and shake vigorously until the ice breaks up into smaller pieces, about 30 seconds with quality ice. Open pour into a snifter and garnish with a lime wheel, cherry and mint sprig.

In the accompanying text on the PUNCH website, Prestwood says that he wanted to make a simple Tiki drink like one from Don The Beachcomber, which plays with and emphasizes the cinnamon notes of Angostura. Well, that was definitely a success, this one could also have come from the old Tiki legends. The bitters come through wonderfully and are almost a little bit the star, the tropical notes are nice and subtle in the background. I have reduced the drink by a third from the recipe shown, which I would also advise you to do.

But definitely a drinkable and yet complex tiki highlight with ingredients that are actually very commonplace as far as this subtype of cocktail is concerned.
